Easy Lemon Pudding Cake
I have an inappropriate but very funny (at least to me, and really, isn’t that what matters?) Costco story to share with you.
When I was in college very few people had personal computers. Archiac, I know. 🙂 There were lots of computer labs on campus though, and I was lucky enough to have a good friend who not only had a computer but was incredible about sharing it. She even let me have a key to her place to make it easier to use it.
So one day I’m at her place, using the computer. And something happens to it. I freak out and call the one person I know who has computer knowledge – my friend Ted. Luckily he is able to come over to help me. And this is where Costco comes in. The computer was in my friends bedroom and I didn’t realize her bathroom cupboards were open. Until Ted walked in, glanced over, and saw the HUGE box of tampons my friend had gotten when her parents were last visiting and had taken her to Costco to stock up on everything.
Ted looks at this huge box and says “not many light flow days, I guess.” So wrong, but so funny. Which is why I think of it pretty much every time I go to Costco and walk down that aisle.
And this is just one of the reasons why I am so excited to have my Costco membership back. The other reasons include great prices for goat cheese, pizza and $16 birthday cakes. I am already planning my first shopping trip. To prepare for it I need to make room in the pantry and fridge. Which is why I made a Lemon Cake. It used three items I had – box of pudding, box of cake and 7up.
Now according to recipe it should have been lemon pudding and white cake. I had the reverse – vanilla pudding and lemon cake.
When mixed it came out a bright, unnatural shade of yellow, so I took that as a good sign.
And it was really good – light and moist cake with a mellow lemon flavor and then a huge lemon flavor from the glaze. Very tart and refreshing.
I will enjoy eating it as I refill my pantry with Costco goodies. Like a big tub of red vines. 🙂
Ingredients
- Box Lemon or White Cake Mix
- 3.4 oz package of vanilla or lemon pudding mix
- 3/4 cup vegetable oil
- 3 eggs
- 1 cup sprite/7up
- 1 cup powdered sugar
- 2 tbsp lemon juice
Instructions
- Preheat oven to 350.
- Combine cake mix, pudding mix, vegetable oil, eggs and sprite in a bowl.
- Mix thoroughly.
- Pour into greased 9 x 12 baking pan.
- Bake for 40 minutes.
- While cake is still warm, mix powdered sugar and lemon juice.
- Drizzle over cake.
- Enjoy!
