Ice cream and I have had our share of issues. First, there’s my inability to fully enjoy it due to myself being lactose intolerant. Second, there are only a few flavors that I can tolerate. I kinda miss this Pinoy resto (can’t remember the name for the love of me) that had Pinoy flavored ice cream (Kamias, duhat, calamans – just to name a few)
Then I was introduced to gelato. Most people think that gelato is just an Italian word for ice cream. Although it has been something that has been accepted, there are huge differences between ice cream and gelato. While ice cream has more..err..cream and therefore has more fat (legally it’s supposed to have a minimum of 10% fat), gelato has more whole milk than cream. Ice cream also has more air (about 50%) while gelato has about 25% less air than ice cream. Gelato is churned at a much slower rate and pace.
